Made by Alberto Martinez during ‘La Canicula,’ a brief dry period in the middle of the rainy season, this is a complex, feral expression of wild-harvested Tobalá distilled in small clay pots. Smoky and savory upfront—almost like a BBQ—with supporting notes of ripe & dried fruit and spice. Wow!
